This flavorful gelatin-rich broth is made from Marin Sun Farms beef bones and browned meat (for flavor), filtered water, and a splash of apple cider vinegar to help draw out minerals. It is slowly simmered at just the right temperature for approximately 48 hours before being jarred. To maximize the nutritional value of our broth, we use only gelatin-rich knuckle and joint bones and beef feet.
To accommodate the needs of those on low- or no-salt diets or with other food sensitivities, we don't add anything else.
According to Dr. Thomas Cowan, co-founder of the Weston A. Price Foundation, "In healthy, traditional cultures, when an animal was slaughtered, all the parts were put to use, including the bones, to make mineral-rich broth. Our modern diet, having largely forgotten the use of broth as the basis of our cooking, is estimated to have less than half the mineral content of more traditional diets. This rich mineral content and the fact that soup broths greatly aid digestion are just two of the many reasons why everyone should make soup broth a part of their daily diet."
DO NOT FREEZE the beef bone broth in these jars. Although the jars are meant to be freezer-safe, we have found that the beef broth can still expand and crack the jar when frozen. You can transfer the broth to a different container to freeze it, or freeze it in ice cube trays for better portion control. We find that, unopened, the broth lasts for four weeks or more in the fridge, and should be consumed within 5 days of opening or thawing.
The term "broth" does not always mean the same thing to everyone. In the most commonly accepted usage, what we make is called "Bone Broth." It is the most gelatin-rich (meaning protein-rich) and mineral-rich of these variations, and cooked the longest. The term "broth" on its own (or "chicken broth" or "beef broth," etc.) usually means it was made with meat and little or no bones, cooked for a shorter time, less than 6 hours, and serves more as a flavoring base than a nutritional vehicle. "Stock" most often refers to bones simmered with vegetables and possibly herbs or whole spices, perhaps some meat, and is also usually cooked for less than 6 hours.
