A layer of mashed ripe plantains cooked with butter and coconut oil tops a savory layer of grassfed ground beef sauteed with onions, green olives, mild spices and a few seasonal sweet peppers. A sprinkling of Sierra Nevada grassfed cheddar cheese tops it off, and then it is baked for a wonderful and kid-friendly taste of the Caribbean!
