Baby Lima beans are activated by soaking and slow-cooked in chicken bone broth, then simmered in more broth with chicken, dandelion greens, escarole and chard from local farms. This week's Meaty Pint. Inspired by a traditional recipe from Northeastern Thailand and Laos called Larb Moo, this tasty dish brings together ground pork with galangal (a root similar to ginger, but less spicy and more floral), Makrut lime leaves, traditionally brewed fish sauce, cilantro and scallions for a delicious and aromatic dish. Perfect over rice, or try the traditional serving method for Larb Moo: wrapping it in lettuce leaves and eating at room temperature.

A dairy-free version of the Indian favorite, featuring our scrumptious, broth-based Coconut Tikka Masala Sauce. Broth-based sauces were integral to many traditional diets as a way to bring the digestive-supporting qualities of bone broth to meaty and starchy dishes. An unexpected and thoroughly delicious combination! This traditional Dominican baked dish is called Pastelon de Platano Maduro. A layer of mashed ripe plantains cooked with butter and coconut oil tops a savory layer of grassfed ground beef sauteed with onions, green olives, mild spices and a few seasonal sweet peppers. Limited Quantity! We received a small windfall of local apricots and turned them into last week's Apricot Crumble. With the remaining few apricots we made a small batch of this a gem of a product.
We gently simmered apricots until tender, then mixed with Straus butter and raw honey for a delicious spread that contains no refined sugar and is more nutrient-dense and balanced than jam. It is delicious on toast, of course, but it can also be stirred into yogurt, served with meat (try it with pork chops or steak!), dolloped on pancakes or waffles, or just eaten with a spoon (honey butters are suggested in the GAPS diet to quell sweet cravings).
