The New Leaf Bakery is led by Hector, who has been the lead baker at Grindstone for 20 years. After Grindstone closed its doors, Hector with the support and guidance of the original owner of Grindstone decided to open the new bakery. They follow the traditional ancient method of stone grinding the Quinoa and Millet at the bakery just before making the dough, followed by a slow natural fermentation or authentic sourdough.
The health benefits of both Quinoa and Millet are well known. Quinoa is a seed, not a grain. It has a low glycemic index, is high in protein, and contains all the essential amino acids. It is rich in fiber and minerals, contains omega 3 and 6 fatty acids, is a good source of vitamin B2, folic acid, and vitamin E, and is also rich in polyphenols, phytosterols, and flavonoids. Millet is a grain but is not as inflammatory as most grains are; it is rich in magnesium and potassium and high in fiber. But the best thing about Millet is that it can work wonders for your gut; your gut microbes love its fiber, so it is a great pro-biotic.
These Gluten Free cookies are a testament to the art of balancing flavors, as the nuttiness of the sesame seeds seamlessly intertwines with the buttery notes, resulting in a taste that is both familiar and refreshingly unique. Whether paired with a hot cup of tea, enjoyed as an afternoon pick-me-up, or savored as a light dessert, these cookies are sure to leave a lasting impression.
As usual, they are handcrafted using only the finest organic ingredients and a time-honored recipe.
Enjoy!

Philosopher's food takes cashews where they’ve never been by sprouting and fermenting them into a savory and crispy snack nut! Introducing Gut Nuts™, the world’s first sprouted, fermented, and dehydrated cashews.
Expect sour, salty, and umami flavor notes. No more naturally sweet cashews here! These are perfect for crunchy snacking, adding to salads, dicing into crusts, or ground into a meal for savory cashew breads or muffins. Be sure to allow the cashews to touch all parts of your tongue to reach every different flavor receptors! In their patent-pending process, Philosopher's sprouts and lacto-ferments organic cashews to hit the perfect level of acidity and sourness. Then the cashews are dehydrated at the lowest possible temperature to dry them out, creating a crunchy, wholly healthy shelf-stable snack nut that pops in both flavor and texture.
THE 5TH TASTE: Savory/umami is a key flavor as one of the five tastes (sweet, salty, sour, bitter, and savory) that is not well represented in the American palate.
Ingredients: Fermented Organic Cashews, Ancient Seabed Salt, Probiotic Cultures (Select strains of non-GMO, vegan, and dairy-free cultures.)
