About the bean
One of the most notable coffee producing regions in Ethiopia is Yirgacheffe. This small area is in the southern part of the country, encompassing Gedeo zone – part of the Southern Nations, Nationalities, and People’s Region (SNNP) – and part of Oromia Region. This eastern portion of the highlands is surrounded by Oromia Region on all sides but the north which borders the Sidama region. Yirgacheffe is home to fertile soil, high elevation, and a tropical climate with moderate wet and dry seasons.
This Ethiopia Yirgacheffe Organic is washed and dried on traditional raised beds, which promote even drying with optimal airflow. The heirloom varietal, idyllic climate and processing methods combine to create a signature flavor. The profile is renowned for its bright acidity, delicate body and floral aroma.

About the bean
There are plenty of obstacles to cultivating and exporting coffee from the department of Huehuetenango. The terrain is rugged, and the weather is extreme. But coffee grows well here, and 634 families with farms that average just a few acres in size work together through a cooperative called Guaya’b Asociación Civil (GUAYA’B) to overcome the obstacles. The farms have been certified organic and Bird-Friendly by the Smithsonian Migratory Bird Center.
GUAYA’B provides members with access to micro-financing to ensure year-round farm maintenance and periodic renovations. GUAYA’B also provides technical assistance, which includes soil analysis and training on organic fertilizer production. During the harvest, GUAYA’B has established a childcare service so parents have a safe place for their children to learn while they pick coffee.
Each producer delivers cherry from their individual farms to a centralized wet-mill equipped with environmental controls to return water to the environment free of contamination. At the mill, the cherry is depulped and fermented for 36 to 48 hours, then washed and classified by density in channels of water and dried to 11 percent moisture on patios in the sun. The result is a traceable community lot with a vibrant regional profile, ensuring greater producer earnings.

Swiss Water Process (SWP) decaffeinated coffees are free of added chemicals and processed using the cleanest water possible. SWP is also dedicated to aiding initiatives that support sustainability and the livelihoods of producers around the world.
The SWP process works through diffusion, not osmosis. Initially, green coffee beans were soaked in water until all the caffeine and flavor compounds were extracted. The beans were then discarded, and the solution they created was run through a carbon filter that removed the caffeine, leaving behind only the flavor compounds—what SWP calls its green coffee extract, or GCE.
When SWP decaffeinates a coffee, the beans are soaked with a small amount of the GCE, which creates a saturated solution in which the caffeine leaves but the coffee’s flavor compounds remain in place, unaffected. The GCE is like a yeast “mother.” While initially SWP had to sacrifice some coffee to create it, once the first batch was made, it just needs to maintain the health of the GCE and keep it slowly regenerating, which it does by adding small amounts of clean water.
Once the caffeine is extracted from the beans, they’re dried to 10.2 percent moisture and ready to be roasted.

About the bean
In Peru the bulk of coffee production comes from small farms owned and managed by people who follow organic farm management practice attuned to their cultural connection with the land. Producers typically cultivate coffee on just a few acres of land intercropped with shade trees, bananas, corn, and beans. They carefully harvest and sort cherries before depulping, fermenting, washing, and drying the coffee using their own micro-mills.
While producers design farm management and post-harvest solutions to fit their needs, they also need a strong alliance to bring their coffee to the international market and earn fair prices. Aroma del Valle, an organization established to assist small producers access the specialty coffee market carries out activities that often go unnoticed but are crucial for small producers. Investments for basic infrastructure needs, like road improvements, establishing local warehouses, and preparing coffee for export are all coordinated through Aroma del Valle, which ensures traceability and quality control throughout the post harvest process. Aroma del Valle also helps farmers navigate the organic certification process.
