For this classic shrub, we infused Bernie's Best apple cider vinegar with organic fresh thyme and local yerba santa. We added juice from local gravenstein apples along with raw local honey to balance the traditional tang of the oxymel (vinegar-infused medicinal tonic).
A shrub is a traditional fruit concentrate, like a syrup, preserved with vinegar and used to make or flavor beverages. A few ounces with bubbly or still water makes a fabulous drink all on its own (we recommend a dilution of 4 or 5 parts water to 1 part shrub), and there's no reason you couldn't use it as a cocktail mixer if that's your thing! Shrubs can also add zing to jam or salad dressing, and make a wonderful glaze for grilled meats.

Our simple, flavorful, deeply nourishing broth is made from roasted organic chicken bones, extra chicken feet (which are especially rich in gelatin), plus a splash of Bernie's apple cider vinegar to help draw out minerals. The broth simmers at just the right temperature for 12-16 hours to draw out the nutrients without damaging them by overcooking, and to bring out a lovely flavor.
To accommodate the needs of those on low- or no-salt diets or with other food sensitivities, we don't add anything else.
A half cup in the morning is a great way to awaken your digestion and get a shot of very digestible protein – about as much as 1 egg. The term "broth" does not always mean the same thing to everyone. In the most commonly accepted usage, what we make is called "Bone Broth." It is the most gelatin-rich (meaning protein-rich) and mineral-rich of these variations, and cooked the longest. The term "broth" on its own (or "chicken broth" or "beef broth," etc.) usually means it was made with meat and little or no bones, cooked for a shorter time, less than 6 hours, and serves more as a flavoring base than a nutritional vehicle. "Stock" most often refers to bones simmered with vegetables and possibly herbs or whole spices, perhaps some meat, and is also usually cooked for less than 6 hours.
According to Sally Fallon, author of Nourishing Traditions, "[Bone broth] contains minerals in a form the body can absorb easily—not just calcium but also magnesium, phosphorus, silicon, sulphur and trace minerals. It contains the broken-down material from cartilage and tendons--stuff like chondroitin sulphates and glucosamine, now sold as expensive supplements for arthritis and joint pain."
If you're new to bone broth in your diet, or concerned about consuming a whole jar within 5 days of opening it, you can freeze what you don't need right away. One ingenious way to introduce broth into your life, or to simplify portion control, is to freeze it in ice cube trays, then store the cubes in a bag or container in the freezer. Heat a few whenever you want a cup of broth, add a few cubes when you cook rice or any starch, or when you're heating up a soup or stew...you get the picture.

DO NOT FREEZE the beef bone broth in these jars. Although the jars are meant to be freezer-safe, we have found that the beef broth can still expand and crack the jar when frozen. You can transfer the broth to a different container to freeze it, or freeze it in ice cube trays for better portion control. We find that, unopened, the broth lasts for four weeks or more in the fridge, and should be consumed within 5 days of opening or thawing.
The term "broth" does not always mean the same thing to everyone. In the most commonly accepted usage, what we make is called "Bone Broth." It is the most gelatin-rich (meaning protein-rich) and mineral-rich of these variations, and cooked the longest. The term "broth" on its own (or "chicken broth" or "beef broth," etc.) usually means it was made with meat and little or no bones, cooked for a shorter time, less than 6 hours, and serves more as a flavoring base than a nutritional vehicle. "Stock" most often refers to bones simmered with vegetables and possibly herbs or whole spices, perhaps some meat, and is also usually cooked for less than 6 hours.

The trotters (feet) are the most gelatinous part of the hog, and so broth made from them is thick, nourishing and especially high in digestible protein. This broth is made from the fresh (unsmoked) trotters from Marin Sun Farms pasture-raised pigs, with a splash of Bernie's apple cider vinegar to help draw out minerals, and is gently cooked for 12-16 hours.
To accommodate the needs of those on low- or no-salt diets or with other food sensitivities, we don't add anything else.
You can simply heat the broth with a little salt and pepper, or tamari, fish sauce, coconut aminos, miso or any flavoring of your choice. Add it to enrich soups and stews (or use it as a base for your own soups), cook your rice or any starches in it, or braise a chop, boneless cut or stew meat and vegetables for dinner. Add a little cold broth to deglaze a frying pan with a spatula and capture all that stuck-on flavor from grilled meats to use in a sauce or gravy.

The term "broth" does not always mean the same thing to everyone. In the most commonly accepted usage, what we make is called "Bone Broth." It is the most gelatin-rich (meaning protein-rich) and mineral-rich of these variations, and cooked the longest. The term "broth" on its own (or "chicken broth" or "beef broth," etc.) usually means it was made with meat and little or no bones, cooked for a shorter time, less than 6 hours, and serves more as a flavoring base than a nutritional vehicle. "Stock" most often refers to bones simmered with vegetables and possibly herbs or whole spices, perhaps some meat, and is also usually cooked for less than 6 hours.

Stovetop reheating: cut into pieces and place in a pan with a bit of broth or water. Lid the pan and gently steam over medium-low heat until it reaches desired temperature throughout.
Oven reheating: remove paper lid and cover with foil, then place in oven pre-heated to 325° for 30-40 minutes or until warm throughout.
Dairy-free water kefir. Water kefir grains, also called tibicos, are used to ferment a base of filtered water with unrefined cane sugar and just a touch of molasses. The sugars are metabolized by the kefir grains to produce a light but rich effervescent base. This old-timey brew is then flavored with sarsaparilla, sassafras leaf, ginger, turmeric and other herbs and spices to produce a bubbly probiotic “soda.” Vanilla bean lends this fizzy beverage a rich and complex flavor. Sauerkraut brine is a wonderful tonic for the digestion, and recommended as a great way to rebuild the intestinal flora. This brine, harvested from our weekly krauts, can be consumed in small amounts to stimulate digestion — “brine shots” are a weekly ritual in our kitchen, and everyone was thrilled with the brine this week!
